Looking at the TD Pro Race LT’s in the 15x7. They are ET25 though. From reading through other posts I know 35mm is optimal. TD offers ET 35 on the 15x8 wheel. Being on dirt I think the 15x7 would be better. Is the ET25’s gonna be outside the window for me? Tire plan is 195/50R15.

There will be some other factors to consider such as the increased scrub radius & wear on steering/suspension components. To fit any tire on a lower offset wheel the factors you want to consider are the overall diameter of the actual tire, the alignment & ride height. Your fenders would have potential to see tire contact in certain conditions if those factors are overlooked.

Unless said dirt is really smooth/graded, and not rutted, full of 'baby's head' embedded rocks (like much of New England's dirt/forestry roads), and not washed out, I would go with at least a 195/55-15, if not a 195/60-15 on those 15x7 wheels.
